The original, 100% Italian Pecorino or Canestrato aged in caves. A typical Lucanian product, its rind is black because it is aged for about 6 months in natural caves, where a layer of mold is created that gives the cheese this unique and authentic color and flavor. Slightly stronger in flavor than classic pecorino, for those seeking the true flavors of southern Italy of yesteryear. It too is often paired with our cured meats to create gourmet cutting boards of a superior quality. Produced by the “Tenute del Marchese” company in Stigliano, Basilicata.
